This cheese has a rich heritage, with Arab origin and British influences, and is made by a third generation cheesemonger. The cows that produce the milk for this cheese, graze in peaceful surroundings. It is cured for six months, which brings an intense and lingering flavour, with a buttery colour and texture. Mahon has flavours of aged wood and works well with a good Spanish red. U/P Cows
