This cheese is traditionally made by shepherds in remote rural areas of the Basque and Navarra regions. It is always made from their own Latxa sheep, which makes it unique and hard to come by. A rich and savoury taste with a firm and oily texture. Idiazabal has a characteristic smokiness to it, which is due to the cheeses being stored by the fireplaces in the mountain shepherd huts.
